Malaysian Sushi Chef Wins World Sushi Cup 2018

PETALING JAYA (Selangor, Malaysia) Sept 20 (Bernama) – Using traditional Malaysian flavours in preparing sushi earned Tai Koon Siang the top prize in the World Sushi Cup 2018, beating rivals from Brazil, the Philippines and host, Japan. It was his injection of the unique tastes derived from nasi lemak, laksa and a combination of spicy Indian and Baba Nyonya recipes in his sushi creations which he aptly named ‘Malaysia-TrulyAsia’, that gave him the edge. The competition that was held on Aug 23-24 in Tokyo, Japan also saw the Kluang native also known as Chef Sky Tai, clinching the top prize in two other categories – the Creative Sushi Competition and Edo-mae sushi Open Competition. "In addition to the unique taste, the judges also looked at our skills in filleting, rolling and in using the various knives,” said Tai who works at a sushi bar in Singapore. He was speaking at an event organised by the Norwegian Seafood Council (NSC ) to celebrate his victory, here Thursday. Tai said that he wanted to triumph so badly at the event as he had managed to take the second spot in the competition two years ago. Besides Tai, another participant, Steve Chua Kok Hua also qualified for the finals in the same competition. -- BERNAMA
