What the Mongolian traditionally eats depends on the location and the time of year.
In the south of a diet of mutton and camel, with camel dairy products, is the norm. However, in the Khangai Mountains, beef is more common. In Ulaanbaatar, there is a much larger range of food.
The climate meant that the calorific intake needed to be higher in winter months that in summer, so traditionally, the meat was very fatty. Vegetables are a fairly recent addition to the diet as, in the past, dairy products and undercooked meat were the norm, though some dishes were seasoned with wild onions and garlic.
